Roasted Balsamic Tomato Garlic Bites

Bite-size party appetizers made with fresh mozzarella cheese and balsamic roasted tomatoes served on a cracker. Easy appetizers using fresh ingredients.

Ingredients  

  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar (buy the best you can afford)
  • ¼ teaspoon freshly cracked pepper
  • 16 oz block of fresh mozzarella cheese
  • cups cherry tomatoes (sliced into circles)
  • 3 large large garlic cloves (roughly chopped)
  • 25 whole Crackers (I used Triscuit crackers here but Ritz cracker would be just as good.)
  • 1 tablespoon sea salt to taste
  • 8 whole fresh basil leaves for garnish

Instructions 

  • Preheat oven to 400 F. degrees.
  • In a small bowl mix the olive oil, balsamic vinegar, salt, and pepper, set aside.
  • Slice the tomatoes into little circles.
  • Peel, crush and roughly chop the garlic.
  • Add the tomatoes and garlic to the bowl with the oil and vinegar mixture.
  • Toss well and pour out onto a shallow baking pan.
  • Roast for 15 minutes occasionally tossing.
  • Increase the oven temperature to 450 F. after the 15 minutes are up. Roast an additional 15 minutes tossing occasionally.
  • Remove from oven.
  • Top each cracker with a square of mozzarella cheese, about  ¼ of a teaspoon of the roasted tomatoes and garlic.
  • Top each cracker with a ribbon of basil and a sprinkle of sea salt.
  • 25 appetizers
