Preheat the oven to 400 F. degrees.
Cut the leaves off if your beets still have them.
Scrub and rinse each beet under running water until you've removed all the surface dirt.
Pat dry with a towel.
Place a piece of aluminum foil on a work surface. Place a piece of garlic, a sprinkle of salt and some ground pepper in the center of the foil.
Place the beet in the center of the foil and repeat with the garlic, salt and pepper. Drizzle the olive oil over the beet.
Fold the aluminum foil up and around the beet and twist at the top.
Repeat with remaining beets.
Place all the prepared beets on a cookie sheet.
Roast in the oven for 45-90 minutes depending on the size of the beets, until fork tender.
Allow beets to cool before peeling them. Use in your favorite beet recipes.
The red beets will stain so wear plastic gloves or place a plastic sandwich bag over your hands while peeling.
Extra large beets should be cut in half.
Try to buy beets that are about the same size so they will be done roasting at the same time.
