Breakfast Grilled Cheese Sandwich

Take that boring grilled cheese sandwich to a new level with this Ultimate Breakfast Grilled Cheese Sandwich with layers of fried eggs, hash browns, bacon and gooey cheese sandwiched between two pieces of buttery grilled bread.

Ingredients  

  • 8 slices of thick white bread
  • 16 pieces bacon (cooked crispy and drained well)
  • 4 large fried eggs
  • 8 slices American Cheese
  • 1 package Potatoes O'Brian or hash browns ((cooked following the directions))

Instructions 

Prep

  • Cook the bacon the way you like it and drain on a double layer of paper towels.
  • While the bacon is cooking cook the hash brown potatoes in a skillet until done. Set aside.
  • Fry the 4 eggs the way you like them, runny yolk or not. Place on a plate.

Make the sandwich

  • For each Breakfast Grilled Cheese Sandwich place 1 piece of cheese, two pieces of bacon, top with two heaping spoons of potatoes, then add one egg to the stack.
  • Top the egg with 2 more slices of bacon and add another slice of cheese.
  • Cover with another slice of white bread. Repeat for the remaining 3 sandwiches.
  • Heat a skillet to medium heat.
  • Lightly butter the top piece of bread. Once the pan has heated carefully lift one sandwich and place it butter side down in the pan.
  • Butter the unbuttered top slice of bread.
  • Cook until the bread is a golden brown and the cheese on the bottom layer begins to melt.
  • Carefully flip the Breakfast grilled cheese sandwich over and cook until the bread is golden and cheese melted.
  • Cut in half and serve immediately.
  • Repeat with the remaining breakfast sandwiches.
  • Makes 4 servings.
