Hot and cheesy Crock Pot Buffalo Chicken Dip is made with a rotisserie chicken. Cream cheese and shredded cheese make it thick and cheesy.

Ingredients  

  • 2 cups rotisserie chicken or 2 cups cooked chicken
  • 2 cups sharp cheddar cheese divided
  • 8 ounces cream cheese
  • ½ cup sour cream
  • ¾ cup buffalo sauce

Instructions 

  • If using a rotisserie chicken remove the meat from the bones and roughly chop.
  • Place one cup of sharp cheddar cheese plus all the other ingredients into a 4 or 6 quart crock pot.
  • Cook on low for 1 ½ hours, stirring occasionally.
  • Sprinkle the remaining cup of cheddar cheese over the top and cook until the cheese is melted.
  • Serve with chips.

Notes

  • For a spicier Buffalo chicken dip add about 2 tablespoons (half recipe-double for whole recipe) pickled jalapeños that have been roughly chopped .
