Cranberry Apple Cheesecake Bites is an easy party or holiday appetizer. Made with fresh cranberries, apples, cinnamon and a non bake cheesecake filling. It starts out with these cute little mini Phyllo shells. They make the perfect little base for sweet or savory appetizers.

Place the first seven ingredients into a small sauce pan and bring to a boil. Reduce heat and simmer until apples are tender. Return to a boil.
Mix 2 teaspoons cool water with ¼ teaspoon of cornstarch. Add to the pot and return to a boil. Reduce heat to low and simmer until thickened.
Remove from heat and cool.
Cheesecake Filling Beat the softened cream cheese, powdered sugar, vanilla extract and orange juice in a small bowl until thick and creamy.
Transfer the cheesecake filling into a piping bag or a plastic baggie. Refrigerate until ready to use.
Fill each mini Phyllo cup about ¾th full of cheesecake filling. Top mini appetizer with about ½ teaspoon of the cooled cranberry apple filling.
A piping bag makes filling the tiny appetizer cups very easy, prevents waste and is easy to clean up.
Fill the filo cups right before serving. Or fill ahead of time and keep refrigerated before serving.
Top with whipped cream if desired.
