Ingredients  

  • 5 lbs russet potatoes (peeled and chopped)
  • 4 cups chicken broth
  • 1 cup butter (divided)
  • 8 oz cream cheese (softened)
  • cup whole milk
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon Minced parsley (for garnish)

Instructions 

Preparation

  • Peel the potatoes and remove any dark spots and "eyes". Cut the potatoes into evenly sized chunks. As you peel and cut the potatoes soak them in cold water until your ready to cook them. This will prevent the potatoes from turning brown.

Crock Pot Directions

  • Prepare Potatoes: Add potatoes, chicken broth, and ½ cup butter to an 8-quart slow cooker.
  • Cook: Cover and cook on high for 4 hours, until potatoes are fork-tender.
  • Drain & Warm: Carefully drain potatoes and return to the slow cooker; set to "warm."
  • Mash: Mash potatoes using a masher or stick blender until smooth.
  • Mix: Add cream cheese, remaining butter, milk, salt, and pepper. Stir until well combined.
  • Garnish & Serve: Transfer to a serving dish, garnish with parsley, and enjoy.

Stove Top Directions

  • Peel and chop the russet potatoes into evenly sized pieces. Place them in a large pot and cover with water. Add a pinch of salt.
  • Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, about 15-20 minutes.
  • Drain the potatoes thoroughly and return them to the pot.
  • Using a potato masher or electric mixer, mash the potatoes until smooth and free of lumps.
  • Add softened cream cheese, 1 cup of butter, whole milk, sea salt, and ground black pepper to the mashed potatoes. Stir until well combined and creamy.
  • Transfer the potatoes to a serving dish and garnish with minced parsley before serving.
