Ingredients  

  • 32 oz. frozen corn thawed (or fresh corn kernels)
  • ¾ cup Hellmans or Duke mayonnaise
  • ¾ cup sour cream
  • 2 teaspoon chili powder (divided)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground white pepper
  • 8 oz. Queso Fresco cheese (crumbled, divided)
  • ¼ cup minced fresh cilantro
  • 2 medium fresh limes (sliced into wedges, optional)

Instructions 

  • In a large bowl, combine the corn, mayonnaise, sour cream, 1 ½ teaspoons chili powder, garlic powder, salt, white pepper, and 5 oz. queso fresco cheese crumbles. Mix well to ensure the corn is evenly coated.
  • Pour the mixture into an 8x12 inch casserole dish. Evenly sprinkle with the remaining chili powder and 1 oz of cheese crumbles.
  • Bake in a preheated 350 °Fdegrees oven for 45 to 50 minutes until bubbling and heated through the center.
  • Once done, remove from the oven and top with the remaining cheese crumbles and minced cilantro. Optionally, squeeze the juice from half a lime over the top and serve.
  • Serve as a side dish for your favorite Mexican foods.
