Ingredients  

  • 14 oz Smoked Kielbasa sausage (sliced into medallions)
  • 32 oz bag frozen diced hash brown potatoes (thawed)
  • 1 cup diced onion
  • ¼ cup diced red bell pepper
  • 8 oz. sharp cheddar cheese block (shredded and divided)
  • 10.5 oz can cream of celery soup
  • 1 cup milk
  • ½ cup half and half (heavy cream or milk can be used)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon minced parsley

Instructions 

Prep

  • Thaw the hash brown potatoes.
  • Place the sausage medallions in a large skillet with ¼ cup of water. Simmer on medium heat until the water evaporates. Once the water evaporates continually flip the sausage pieces as they brown. Transferring the pieces to a paper towel lined plate to remove any excess grease.
  • Dice the onion and bell pepper.

Assemble

  • Preheat the oven to 375 °F
  • Spread the hash brown potatoes over the bottom of a 9 x 12 baking dish. Add the sausage, onions, red bell peppers, and 2 cups of the shredded cheese.
  • In a medium bowl combine the cream of celery soup, milk, half and half, salt, pepper, garlic powder and parsley. Whisk until combined with no lumps of soup.
  • Pour over the ingredients in the casserole dish. Toss with a wooden spoon until evenly combined.
  • Bake in the preheated oven for 45 to 60 minutes or until the casserole is bubbling hot.
  • Remove from the oven and sprinkle the remaining shredded cheese over the top and bake for 15 more minutes or until the cheese is melted.
  • Remove from the oven and serve immediately.
