Instructions
Mix the dry ingredients together in a bowl. Whisk till combined. Add oats to the bowl and mix well.
In a separate bowl beat the brown sugar and eggs 2 minutes.
Add the oil and buttermilk and beat 1 minute more.
Fold the wet ingredients into the dry just until moistened.
Add the chopped apples to the bowl and fold until combined.
Fill each muffin tin ¾ full.
In a small bowl mix the topping ingredients.
Top each muffin with about 1 tablespoon of the topping mixture.
Bake in a preheated 350-degree oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove pan from the oven and cool for 5 minutes on a cooling rack. Remove muffins from the muffin pan and cool completely on the cooling rack.
