Ingredients  

  • 1 Box Box red velvet cake mix (15.5 oz.)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips optional

Instructions 

  • Preheat the oven to 325 F. Degrees.
  • Open the package of red velvet cake mix and dump it into a large mixing bowl.
  • Crack the eggs open into a small bowl and slightly beat them with a fork.
  • Measure the vegetable oil and pour it into the mixing bowl.
  • Mix with a wire whisk or dough hook mix until the dry ingredients are moistened.
  • Add the white chocolate chips to the bowl and fold them into the batter.
  • Line an aluminum baking sheet with parchment paper.
  • Scoop the dough with a 2 inch dough scoop or a tablespoon. Place the cookie dough 2 inches apart.
  • Bake the cookies for 10 to 12 minutes. Checking after 10 minutes to make sure the white chips are not browning. If they are remove the cookies from the oven.
  • Let the cookies cool for 10 minutes on the baking sheet. Then use a thin spatula to transfer the hot cookies to a wire cooling rack. Cool the cookies completely.
  • Store the cookies in an airtight container.

  • Hot cookies are very delicate and fragile until they have cooled down. If you try to move them fresh from the oven they will break or fall apart.
