15 Minutes to breakfast bites. You are going to love these Instant Pot Pancake Sausage Bites. Bite size pancake bites filled with a piece of pork sausage link that are easy to dip into a small cup of your favorite syrup. Makes a great breakfast for busy people who need to eat on the go in the morning.
Brown the breakfast sausage links in a skillet until browned on the outside but still slightly under cooked on the inside. Drain on a paper towel. Cut each sausage link into thirds.
In a mixing bowl mix the complete pancake mix and water until combined but still slightly lumpy. Set aside for 3 minutes.
Place a silicone egg bites mold on top of a silicone sling.
Using a cookie dough scoop or tablespoon fill each cup in the silicone mold ⅓ full. Place one piece of a sausage link into the center of the pancake batter in each cup.
Top with pancake batter to fill each cup of the silicone mold ¾ full.
Place the silicone egg bites mold lid on top, being sure to secure the lid to the mold. (See my tip below)
Fill both silicone molds and stack them together on the silicone sling.
Place 1 ½ cups of water for the 8-quart Instant Pot and 1 cup for the 6-quart into the bottom of the Instant Pot insert. Lower the silicone sling down into the Instant Pot.
Secure the lid on the IP. Push the valve to the sealing postion. Press the manual button and set the time to 10 minutes.
Once the Instant Pot has finished pressure cooking allow the steam to naturally release for five minutes. Unplug the appliance.
Push the valve to the unsealed position and when the steam has released remove the Instant Pot Lid.
Carefully lift the silicone sling from the Instant Pot and place on a towel to catch the dripping water.
Unstack the silicone molds and remove the lids.
Allow the Pancake Bites to cool for 5 minutes. Once cooled flip each mold over onto a plate. Apply slight pressure to each cup pushing down to release each Pancake Bite from the mold.
Serve with your favorite syrup.

You can use the trivet that came with the Instant Pot in place of the silicone sling. I prefer the silicone sling because the handles make it easy to remove the egg bites mold from the Instant Pot. The handles do not get hot.
