Place the boneless chicken breasts into a 6 or 7-quart crock pot in a single layer.
In a small mixing bowl measure the honey, Soy sauce, Hoisin sauce, Rice wine vinegar, Sesame oil.
Peel the fresh garlic and mince finely. Add to the mixing bowl. Peel and finely mince the fresh garlic and add to the mixing bowl.
Slice the root ends off the green onion and rinse under cold water. Slice the white ends of the green onion and add to the bowl. Save the green parts for garnishing.
Using a metal whisk mix all of the ingredients in the small mixing bowl until combined well. Pour over the chicken.
Cook on high for 3 to 4 hours or low for 5 to 6 hours. Cooking times will vary depending on the sizes of the chicken breasts you have used.
Once the chicken is done mix the cornstarch and 3 tablespoons of water until lump-free. Add to the crock pot and stir. Allow the sauce to thicken for about 5 minutes before serving.
