Apple Cinnamon Oat Muffin Recipe

Ingredients  

  • 1 ¾ cups all-purpose unbleached flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ cup oats
  • ¾ cup dark brown sugar
  • 2 large eggs
  • ¾ cup Extra Virgin Olive Oil
  • 4 tablespoons buttermilk
  • 1 cup chopped apples

Topping

  • ½ cup oats
  • ½ cup chopped apples
  • 2 tablespoons white sugar
  • ½ teaspoon cinnamon

Instructions 

  • Mix the dry ingredients together in a bowl. Whisk till combined. Add oats to the bowl and mix well.
  • In a separate bowl beat the brown sugar and eggs 2 minutes.
  • Add the oil and buttermilk and beat 1 minute more.
  • Fold the wet ingredients into the dry just until moistened.
  • Add the chopped apples to the bowl and fold until combined.
  • Fill each muffin tin ¾ full.
  • In a small bowl mix the topping ingredients.
  • Top each muffin with about 1 tablespoon of the topping mixture.
  • Bake in a preheated 350-degree oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Remove pan from the oven and cool for 5 minutes on a cooling rack. Remove muffins from the muffin pan and cool completely on the cooling rack.
