Ingredients  

  • 30 oz canned black beans ((two 15 oz. cans))
  • ½ cup diced onion
  • 1 whole minced clove garlic
  • ½ teaspoon salt
  • 1 tablespoon olive oil

Instructions 

  • Heat the oil in a sauce pan.
  • Sauté the onion and garlic clove about 2 minutes.
  • Add the remaining ingredients to the pan and bring to a boil.
  • Reduce heat and simmer 20-30 minutes occasionally mashing the beans.
  • Serve alongside your favorite Mexican recipe.
