Ingredients  

  • 1 whole rotisserie chicken (, meat pulled from the bones)
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup finely diced red (green, yellow and red pepper)
  • ¼ cup finely dice celery
  • ¼ cup sliced green olives
  • 2 tablespoons finely diced onion
  • ½ teaspoon ground pepper
  • ½ teaspoon salt
  • 1 teaspoon celery seed
  • ¼ cup sweet relish (optional)
  • 4 Medium Ciabatta rolls

Instructions 

  • Pull all the meat from the chicken and finely dice.
  • Add the finely diced chicken and remaining ingredients to a bowl and mix well.
  • Refrigerate for at least 2 hours before serving.
  • Serve on a ciabatta roll or sliced bread with pasta salad.
