Fresh asparagus bundles wrapped in smoky bacon drizzled with olive oil and sprinkled with salt and pepper is an easy asparagus side dish recipe to make.

Ingredients  

  • 21 Spears large asparagus
  • 7 Slices bacon
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes ((optional))

Instructions 

  • Trim the tough ends and divide the asparagus spears into 7 bundles of 3 large or 5 small asparagus spears.
  • Wrap each bundle with one piece of bacon in a spiral along each bundle.
  • Arrange the asparagus bundles in a single layer on a shallow baking pan.
  • Drizzle olive oil over each bundle.
  • Sprinkle with the red pepper flakes if using and the salt and pepper.
  • In a preheated 400 F. degrees oven bake for 20 to 30 minutes or until bacon is crispy and golden.

Recipe Expert Tips

  • Cooking Asparagus: Use similar sized asparagus in the bundles. Wrap large stalks together and small stalks together so all of the asparagus in each bundle cooks completely at the same time.
  • What type of pan to use: Use a shallow baking pan with sides to keep the olive oil from spilling over the side while cooking.
