  • Trim the chicken if needed. Sprinkle the chicken with the Cajun seasoning on both sides. Set aside for 15 to 30 minutes.

  • Slowly pour the milk into the flour mixture while whisking. Whisk well to blend the thickened roux into the milk until all lumps are gone.
  • On medium heat slowly bring the alfredo sauce to a boil while whisking.
  • Once a low boil has been reached add the shredded real Parmesan cheese to the pan and whisk well until the cheese has melted.
  • Continue to boil the alfredo sauce over medium high heat until thickened, Once thick remove the pan from the heat.
  • Stir the ground chili powder and red pepper flakes into the alfredo sauce.

Recipe Expert Tips

  • 30 Minute dinner recipe: This recipe can be made in thirty minutes or less if you season the chicken and cook the fettuccine pasta ahead of time.
  • How to know when chicken is done: Cook the chicken until the center thickness has reached 165 F. degrees on an instant read thermometer for the juiciest boneless chicken..
  • Use whole milk for the thickest and richest alfredo sauce. You can also make homemade alfredo sauce with half and half.
  • Use a block of real Parmesan cheese: Real Parm has the best flavor and it will melt into the alfredo sauce and not make it grainy like powdered Parm.
