Ingredients  

  • 2 lbs boneless chicken thighs
  • 6 medium red potatoes cut into quarters
  • 1 medium onion (cut into quarters)
  • 6 whole garlic cloves (peeled and slightly crushed)
  • 1 tablespoon dry oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil.

Instructions 

  • Place the potatoes into the bottom of a slow cooker.
  • Place the chicken on the potatoes.
  • Add the onion, garlic and seasonings to the slow cooker.
  • Drizzle with olive oil.
  • Cook on low for 5-6 hours or high 3-4 hours. Chicken is cooked through when an internal temperature of 165 degrees has been reached.
  • Makes 4-5 servings.
