Instant Pot Black-Eyed Peas recipe is a no-soak dried bean recipe that is packed full of smoky ham flavor with melt in your mouth black-eyed peas. Perfect for eating on New Year's Day!
Melt butter in the Instant Pot on sauté. Add diced onion, carrots, salt, and pepper, and cook about 3 minutes until softened. Stir in minced garlic and sauté one additional minute until fragrant.
Add diced ham, black-eyed peas, and bay leaves to the pot. Pour in the chicken stock, then stir well with a large spoon to evenly combine all ingredients and deglaze the bottom if needed.
Lock the Instant Pot lid in place and ensure the pressure valve is set to sealing. Select Manual/Pressure Cook and set the timer for 30 minutes to cook the mixture under pressure.
If some of the beans are still hard, place the lid back on. Push the valve back to the sealing position and cook for another 15 minutes. Do a quick release. The beans should be soft and tender. Serve over cooked white rice
