Indulge in the comfort of Crock Pot Beef Noodle Soup. Slow-cooked to perfection, it's the ultimate blend of hearty beef and tender noodles. You'll find yourself reaching for this recipe time and again.
Slice the carrots and celery. Dice the onion and mince the garlic. Cut the stew meat into bite-sized pieces. Season and brown the stew meat. Place the browned stew meat in the crock pot.
Add the carrots, celery, onion and minced garlic to the pot.
Sprinkle the salt, ground pepper, and dried thyme over the soup ingredients. Add the bay leaves.
Pour the beef broth over all of the ingredients and stir.
Cover and cook on low for 4-6 hours (or on high for 2-3 hours). Once the meat is tender and the vegetables have softened, stir in the uncooked egg noodles. Add more beef broth if it looks like you need it.
Recover and let it cook for another hour, or until the noodles are tender. Serve with crusty bread, a fresh salad, or even a grilled cheese sandwich for a heartier meal.
