Freezer Mexican Breakfast Burritos Recipe so you can stock the freezer with easy grab and go breakfast burritos. Make them with scrambled eggs and top with salsa and cheese.
In a large bowl beat the eggs, Picante sauce, milk, salt, and pepper until combined. Cook egg mixture in a skillet with butter until fluffy. Strain the cooked egg mixture. Allow eggs to cool to room temperature.
Spread sour cream in a line off center of a tortilla. Layer cooked eggs, shredded cheese and Picante sauce over the sour cream. Fold the sides of the tortilla in and roll the bottom edge of the tortilla up to form a burrito.
Repeat until all burritos are filled. Wrap each Mexican breakfast burrito in a double layer of plastic wrap. Place the wrapped breakfast burritos into Ziploc bags and place in the freezer.
Unwrap the the breakfast burrito from the saran wrap.
Wrap the breakfast burritos in a paper towel and microwave on 1 minute. Flip over and heat for an additional 30 to 60 seconds until heated through and the cheese has melted.
