INGREDIENTS
Fresh Sweet Cherries
Granulated Sugar
Lemon or Lime Juice
– Prepare the Funfetti Cake & Cupcake mix as directed on the package adding the ½ teaspoon to the bowl with the rest of the ingredients.
– Fill cupcake papers ¾ full.

Rinse sweet cherries thoroughly, then stem and pit them, catching any juice in a bowl. Toss pitted cherries with lemon or lime juice to prevent browning while preparing the preserves.
Combine sugar and reserved cherry juice in a large nonreactive pot. Heat until sugar dissolves, add cherries, and boil until glossy. Cool completely, then refrigerate the mixture overnight.
Wash and inspect canning jars and lids, then keep jars hot in simmering water. Reheat the cherry mixture to a rolling boil, cooking until it reaches nearly 220°F. Skim off any foam.
Ladle preserves into hot jars, leaving ¼-inch headspace. Seal, process in a boiling water bath for 10 minutes, then cool jars overnight on a towel before storing.
