Stock the freezer with ready to cook chicken fajita ingredients. For busy week nights just thaw, cook, and serve in under 30 minutes. It is a perfect freezer meal to get started with.
Prep the chicken, bell pepper and onion. Place the prepped chicken in a bowl and sprinkle with fajita seasoning. Toss to evenly coat the chicken with the seasoning. Transfer the seasoned chicken to a quart size freezer bag.
Add the sliced onion next. Top the onion off with the bell pepper strips. Flatten the bag and push as much air out of the bag as possible. Zip the bag closed.
Clearly label the meal bag with the printable chicken freezer meal label in my shop or a marker. Place the bag in the freeze flat so it is easy to stack in the freezer.
Thaw the bag in the refrigerator overnight. Heat olive oil in a large skillet. Add the thawed contents of the bag to the hot skillet. Cook over medium high heat until the chicken is cooked through to 165°. Serve in warm flour tortillas with your favorite toppings.
