Surprise your friends and family with these old fashioned homemade Chocolate Raspberry Jellies Candy for a homemade holiday. This is one of my favorite Christmas treats I enjoyed as a child.
Combine pectin, water, and baking soda in one saucepan and sugar with corn syrup in another. Set both over high
heat simultaneously, stirring constantly for about four minutes until the pectin
foam thins and the sugar
boils vigorously.
Slowly pour the pectin mixture in a steady stream into the rapidly boiling sugar mixture while stirring nonstop. Continue cooking for one additional minute, then remove the pan from heat and stir in your chosen flavoring or extract.
Immediately transfer the hot candy mixture into a greased loaf pan or greased candy molds. Let the candy sit undisturbed at room temperature overnight until fully firm, allowing it time to set to the proper texture.
Once firm, unmold the candy onto sugar-dusted wax paper. Cut into squares or roll molded pieces in sugar. Let dry overnight, then dip the pieces in melted chocolate and
return them to wax paper to harden completely.
