After looking at about 4 different recipes that are available online I came up with my own recipe based on the spices I had in my cabinet. After brewing the pot and taking a sip from that warm spicy cup I am so glad I decided to try and come up with a recipe of my own.
Assemble spices, crush cardamon pods and break cinnamon sticks in half.
Fill pot with water, add all the spices to pot and bring to a boil. Boil at least five minutes. Ten minutes for a stronger spice flavor. I boiled my pot of spices for about seven minutes and it had a very nice spicy flavor. Some chai teas are way too spicy for me but seven minutes gave me a nice mellow spice flavor, not over powering.
Add tea bags to pot of water and spices. Steep tea 8 - 10 minutes and remove tea bags. Tea gets very bitter if steeped too long.
While tea steeps warm your dairy of choice in a small pot until bubbles form along the inside edges of the pot. Remove from heat and whisk until foamy.
Remove tea bags and pour tea/spice mixture through a fine mesh strainer into a warmed tea pot.
Fill tea cup half way to ¾ full with chai tea and top off with your warmed milk, liquid creamer or half and half.
Dollop whipped cream on top and sprinkle with ground cinnamon.
