Ingredients  

  • thyme syrup ((directions below))
  • salt
  • 2 oz Silver Tequila
  • ½ oz blood orange juice
  • chilled club soda or chilled blood orange or grapefruit soda ((I used club soda to allow the flavor of fresh blood orange juice to shine through))
  • 1 med sprigs of fresh thyme
  • 1 small blood orange wedge
  • 1 scoop ice

  • ½ cup sugar
  • ½ cup water
  • 1 cup fresh thyme stems and leaves (packed)

Instructions 

Directions to Make Thyme Syrup

  • Place the sugar and water in a small saucepan. Heat on medium until sugar has dissolved, stirring occasionally. Bring to a boil.
  • Remove the pot from the burner and allow to cool slightly about 10 minutes.
  • Place the fresh thyme stems and leaves into the warm sugar syrup, pushing it down until it is submerged. Place a lid on the pot and allow to steep for about 2 hours or overnight.
  • Strain through a fine-meshed strainer that has been lined with a coffee filter or cheesecloth.
  • Transfer the thyme syrup to a glass bottle and cover. Refrigerate until ready to use.
  • Keep unused thyme syrup refrigerated for about 3 weeks.

Directions to make Blood Orange Thyme Paloma Cocktail

  • Rim glass by swirling it in a shallow bowl with homemade thyme syrup.
  • Dip the glass into a shallow bowl of salt.
  • Fill the glass with crushed ice.
  • Add the blood orange juice and tequila to the glass.
  • Top the cocktail glass off with chilled club soda.
  • Garnish glass with sprigs of fresh thyme, wedges of a blood orange.
