Instructions

  • Harvest one cup of lemon basil leaves and stems early in the morning when the herbs essential oils are the strongest.
  • Rinse them in cool water and drain on a paper towel.
  • In a medium sized sauce pan measure one cup of water and one cup of granulated sugar. Bring the pot to a boil and remove from the heat.
  • Allow the simple syrup cool for about 20 minutes.
  • Once the syrup is cool crush the lemon basil leaves and stems slightly and put it into the pot of simple syrup.
  • Stir and push the leaves down so they are submerged in the syrup.
  • Let the lemon basil leaves and stems steep for one hour.
  • After an hour strain the lemon basil leaves and stems from the syrup through a piece of cheesecloth or a coffee filter. Make sure to remove all pieces of the herb. If you don't it could mold.
  • Pour your lemon basil simple syrup into a jar with a lid and cover. Store any left over syrup in the refrigerator. It will keep for a couple of weeks.
  • To make a glass of lemon basil herbal soda measure 2 to 4 tablespoons of lemon basil simple syrup into a glass filled with ice.
  • Pour club soda or seltzer water over the ice and stir.
  • Take a big sip and enjoy. Ah it tastes so good!
