Making homemade herbal soda is so simple I want to encourage you all to try it. One of my favorite herbs is lemon basil. I'd love to show you How to Make Lemon Basil Herbal Soda.
Harvest one cup of lemon basil leaves and stems early in the morning when the herbs essential oils are the strongest.
Rinse them in cool water and drain on a paper towel.
In a medium sized sauce pan measure one cup of water and one cup of granulated sugar. Bring the pot to a boil and remove from the heat.
Allow the simple syrup cool for about 20 minutes.
Once the syrup is cool crush the lemon basil leaves and stems slightly and put it into the pot of simple syrup.
Stir and push the leaves down so they are submerged in the syrup.
Let the lemon basil leaves and stems steep for one hour.
After an hour strain the lemon basil leaves and stems from the syrup through a piece of cheesecloth or a coffee filter. Make sure to remove all pieces of the herb. If you don't it could mold.
Pour your lemon basil simple syrup into a jar with a lid and cover. Store any left over syrup in the refrigerator. It will keep for a couple of weeks.
To make a glass of lemon basil herbal soda measure 2 to 4 tablespoons of lemon basil simple syrup into a glass filled with ice.
Pour club soda or seltzer water over the ice and stir.
