Ingredients  

  • 1 lb. Bacon (cook crispy and drained)
  • ½ lb breakfast sausage roll (crumbled and cooked until no longer pink)
  • 4 cups diced hash brown potatoes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 9 large eggs
  • 1 cup small curd cottage cheese
  • 1 cup sour cream
  • 3 cups shredded medium cheddar (divided)
  • 2 cups shredded Swiss cheese

Instructions 

Prep

  • Begin by cooking the bacon in a skillet until crispy. Drain on paper towels.
  • Cook the sausage in the same skillet, breaking it into crumbles. Drain well.
  • Thaw the hash brown potatoes and preheat your oven to 350°F.
  • Grease a 9x13 baking dish.

Assemble the Breakfast Casserole

  • In a large bowl, whisk together the eggs, cottage cheese, and sour cream. For a smoother texture, blend this mixture in a blender until the cottage cheese lumps are gone.
  • Add in the cooked meats, 2 cups of cheddar, and all the Swiss cheese, folding gently.
  • Add the thawed diced potato hash browns to the bowl and fold into the egg and cheese mixture.
  • Pour into the grease baking dish, bake for 45 minutes,
  • Then top with the remaining cheddar and bake until melted.
  • Remove the bubbling casserole from the oven and allow to cool slightly before cutting into squares and serving.
  • Serve with toast and juice.
