Instructions

  • Heat an 8-quart Instant Pot on the sauté setting. Melt the butter and add the chicken. Sauté until lightly golden. Cancel the sauté setting.
  • In a medium-sized bowl, whisk the cream soup, sour cream, and chicken broth together to combine.
  • Pour the creamy soup mixture over the chicken and mix to coat the chicken pieces.
  • Sprinkle the dry stuffing mix over the chicken but do not stir. Twist the lid on and set the valve to sealing.
  • Pressure cook on high pressure by pressing the manual button and setting the time to 5 minutes.
  • When the pressure-cooking time is complete, do a quick release by pushing the pressure valve to the open position. Press the cancel button. When the valve falls, carefully open the lid and, using potholders, remove the inner pot from the appliance so the thick sauce does not burn on the bottom.
  • Serve immediately with suggested sides.
  • Makes 4-6 servings

Recipe Expert Tips

  • Ensure the chicken is cut uniformly for even cooking.
  • Use the sauté function to add a golden color and deeper flavor to the chicken.
  • Scrape the bottom of the pot well to prevent the burn notice.
  • Whisk the soup mixture thoroughly for a smooth sauce.
  • Do not stir the stuffing mix into the chicken to prevent it from becoming mushy.
  • A quick release of pressure prevents overcooking.
  • Removing the inner pot immediately after cooking keeps the sauce from burning.
  • Serve immediately for best texture and flavor.
