Ingredients  

  • 1 tablespoon butter
  • 2 lbs. beef stew meat (cut into bite size pieces)
  • 1 medium onion (peeled and diced)
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 medium bay leave
  • 2 ½ cups beef stock
  • 3 tablespoons cornstarch
  • 3 tablespoon cold water

Instructions 

  • Turn the Instant Pot on the sauté setting and melt the butter. Add the diced onion and sauté until translucent. Add the garlic and sauté for 1 minute. Cancel the sauté setting.
  • Add the stew meat, salt, pepper, and bay leaf to the Instant Pot. Pour the beef broth in and stir.
  • Twist the lid on and turn the pressure valve to the sealing position. Press the manual button and set the pressure-cooking time to 15 minutes.
  • Once finished pressure cooking, do a quick release. Carefully open the lid.
  • Remove and discard the bay leave.
  • In a small bowl, mix the cornstarch and water together until dissolved and lump-free. Pour into the pot and mix to combine.
  • Press the sauté button again and bring to a boil, occasionally stirring until the gravy has thickened.
  • Serve the beef tips and gravy garnished with parsley for a fresh touch. Serve with mashed potatoes, cooked wide noodles and your choice of sides.
