Ingredients  

  • 1 ½ lbs. boneless chicken
  • 2 medium carrots (peeled and sliced)
  • 3 small stalks celery (trimmed and sliced)
  • 1 small onion (peeled and diced)
  • 1 jalapeno (seeded and diced 2 tablespoons)
  • 1 heaping tablespoon minced garlic
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • 1 teaspoon parsley flakes
  • ½ teaspoon ground black pepper
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon ground cayenne pepper
  • 1 bay leaf
  • 8 cups chicken broth (divided)
  • 3 cups uncooked rigatoni pasta or wide egg noodles

Instructions 

Prep the vegetables

  • Prep the vegetables by slicing the carrots and celery.
  • Dice the onion.
  • Mince the fresh garlic.

Make the soup

  • Begin by placing the chicken, onion, carrots, celery, garlic, and jalapeno into an 8-quart slow cooker.
  • Sprinkle in the salt, pepper, red pepper flakes, oregano, cumin, black pepper, paprika, cayenne pepper, and bay leaf.
  • Gently pour the chicken broth over the ingredients, stirring to combine.
  • Cover with the lid and set to cook on high for 2 to 3 hours, or on low for 4 to 5 hours, until the chicken reaches an internal temperature of 165°F.
  • Carefully remove the chicken, let it rest for 5 minutes, then shred it into bite-sized pieces before returning it to the slow cooker. Add the pasta, stirring well, and continue cooking for an additional 30 to 60 minutes, or until the pasta is tender.
  • Serve hot, accompanied by bread or crackers, and consider adding a few drops of hot sauce to each bowl for extra heat.
