Ingredients  

  • 1 ½ lbs. boneless chicken
  • 15 oz can diced tomatoes (drained)
  • 1 cup diced onion
  • 1 cup diced carrots
  • 2 tablespoons minced garlic
  • 2 tablespoons dried Italian seasoning
  • 2 medium bay leaves
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 6 cups chicken broth (add more if needed)
  • 16 oz box rotini pasta (uncooked)
  • 1 cup shredded Parmesan cheese

Instructions 

Recipe Prep

  • Dice the carrots and onions. This can be done the night before if needed.

Soup Directions

  • Place the chicken, diced tomatoes, diced onion, and diced carrots in a 7- or 8-quart crock pot.
  • Add the minced garlic, Italian seasoning, bay leaves, salt, and black pepper, and stir to combine.
  • Pour in the chicken broth and stir to combine.
  • Cook on high for 2-3 hours, or on low for 4-5 hours until the chicken is cooked. Check the chicken's internal temperature to ensure it's cooked thoroughly.
  • Remove the chicken and shred the cooked chicken then return it to the pot. Add the uncooked pasta and additional broth if needed.
  • Recover and cook for an additional 30-60 minutes or until the pasta is tender. Discard the bay leaves before serving.
  • Garnish each serving with a sprinkle of shredded Parmesan cheese.
  • Serve piping hot in a soup bowl, with homemade Italian Bread.
