Ingredients  

  • 1 ½ lbs. browned ground beef
  • 1 ½ cups long grain white rice (rinsed well)
  • 1 cup medium salsa
  • 1 cup black beans (drained and rinsed)
  • 3 tablespoons Taco seasoning
  • 2 ½ cups chicken broth
  • 2 cups shredded cheddar cheese (divided)

Instructions 

  • Turn your Instant Pot onto the sauté mode. Add the ground beef and brown. Drain well in a colander and return the browned meat to the Instant Pot.
  • Add the salsa, black beans, taco seasoning and ½ cup of the shredded cheese to the ground beef.
  • Add the long-grain white rice, and stir it into the other ingredients ensuring it's evenly distributed.
  • Pour in the chicken broth in a stir the ingredients until they are combined with the broth.
  • Secure the Instant Pot lid, push the pressure valve to the sealing position and set to Pressure Cook on High for 6 minutes. Once done pressure cooking, allow a pressure to release naturally for 8 minutes, then perform a quick release.
  • Stir the mixture, top with the remaining cheese, and twist the cover back on for 10 minutes to allow the heat of the pot to melt the cheese.
  • Serve immediately in a bowl as a side dish alongside your favorite Mexican dishes or use it as a filling to make beef and rice burritos or tacos.

  • Always make sure the vent is set to "sealing" before starting the pressure cooking cycle.
  • Don't overfill your Instant Pot—it should never be more than two-thirds full.
