Ingredients  

  • 3 slices bacon (fried crispy and drained on a paper towel)
  • 1 ½ lbs ground beef
  • 1 cup diced onion
  • 2 medium garlic cloves (peeled and minced)
  • 10 oz. Rotel tomatoes (or diced tomatoes)
  • 2 ½ cups cheddar cheese (divided)
  • 2 cups beef broth
  • 1 cup milk (cream or half and half can also be used)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoon corn starch mixed with 3 tablespoons cold water

Instructions 

  • Fry the bacon in a skillet and drain on a paper towel. Once cool, roughly chop and set aside.
  • Wipe the skillet clean and add the ground beef and onion. Cook until the ground beef is browned, adding the minced garlic to the pan in the last few minutes of browning.
  • Drain well in a colander and pour the browned meat, onion, and garlic into a crock pot.
  • Add the diced tomatoes, 1 ½ cups of cheese, milk, beef broth, salt, and black pepper. Mix to combine.
  • Cover the slow cooker and turn it on low. Let it cook for 2 to 3 hours.
  • Once the soup is hot and the cheese has melted, add the cornstarch slurry and stir. Recover and heat about half an hour or until thickened.
  • Sprinkle the remaining cheddar cheese and chopped bacon on top. Recover so the cheese melts. Once melted, the soup is ready to serve.
  • Serve with biscuits or crusty bread.
  • Makes 6 servings.

  • For a vegetarian version, substitute the beef with plant-based meat and use vegetable broth.
  • If the soup is too thick, add more broth or milk.
