Fry the bacon in a skillet and drain on a paper towel. Once cool, roughly chop and set aside.
Wipe the skillet clean and add the ground beef and onion. Cook until the ground beef is browned, adding the minced garlic to the pan in the last few minutes of browning.
Drain well in a colander and pour the browned meat, onion, and garlic into a crock pot.
Add the diced tomatoes, 1 ½ cups of cheese, milk, beef broth, salt, and black pepper. Mix to combine.
Cover the slow cooker and turn it on low. Let it cook for 2 to 3 hours.
Once the soup is hot and the cheese has melted, add the cornstarch slurry and stir. Recover and heat about half an hour or until thickened.
