Ingredients  

  • 2 lbs. boneless chicken
  • 1 cup sliced celery
  • 1 cup cubed or sliced carrots
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 6-8 cups chicken stock
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 large bay leaf
  • 1 can cream of chicken soup
  • 16 oz. Wide Egg noodles or spiral noodles

Instructions 

  • Place the chicken in the crock pot along with the celery, carrots, onion and bell pepper.
  • Add the Cajun seasoning, garlic powder, salt, ground pepper, and bay leaf.
  • Pour 6 cups of the chicken stock in and stir to combine.
  • Cover and slow cook for 1 ½ to 2 hours or until the chicken is cooked completely through the center to 165 degrees. Use an instant read thermometer to check the internal temp.
  • Remove the chicken and rest for 10 minutes before shredding or cutting into bite size pieces.
  • Scoop the cream of chicken soup into the crock pot. Use a whisk to blend into the chicken broth. Return the now shredded or cubed chicken along with the uncooked noodles to the crock pot.
  • If needed add the remaining 2 cups of chicken stock. Recover and cook for about an hour or until the pasta is tender.
  • Serve hot once the noodles are tender. Remove and discard the bay leaf before serving.
