Make delicious authentic chicken fajitas at home. All you need are a 5 ingredients and your favorite fajita topping to enjoy this delicious Tex-Mex cuisine at home. You can also make steak or shrimp fajitas with this same recipe.
Cut boneless skinless chicken into ½ inch thin strips or cubes. Put the chicken into a bowl and sprinkle with fajita seasoning mix. Toss the chicken to coat the pieces with the seasoning mix.
Marinate the chicken for 20 to 30 minutes in the fajita seasoning.
Heat 1 to 2 tablespoon of olive oil in a cast iron skillet over medium heat.
Sear all sides of the chicken over medium high heat for about 5 minutes.
Push the chicken pieces to the side and add the sliced onion and bell peppers to the skillet.
Toss to combine and continue cooking for another 3 to 5 minutes or until the chicken pieces are cooked through the center.
Turn off the heat. Sprinkle the top with shredded cheddar cheese. Place a lid on the skillet and let the cheese melt before serving.
Serve the chicken fajitas with flour tortillas and your favorite toppings.
