Chicken Fajitas

Make delicious authentic chicken fajitas at home. All you need are a 5 ingredients and your favorite fajita topping to enjoy this delicious Tex-Mex cuisine at home. You can also make steak or shrimp fajitas with this same recipe.

Ingredients  

  • 1 lb. boneless skinless chicken (1 to 1 ½ lbs.)
  • 1 tablespoon fajita seasoning (store bought or try my Gourmet Fajita Seasoning Mix - I like to use 1 ½ to 2 tbs.)
  • 1 large sweet bell pepper (cored, seeded and sliced)
  • 1 medium onion (peeled and cut into thin slices)
  • 6 medium fajita size flour tortillas
  • 1 cup shredded cheese
  • your favorite fajita toppings

Instructions 

  • Cut boneless skinless chicken into ½ inch thin strips or cubes. Put the chicken into a bowl and sprinkle with fajita seasoning mix. Toss the chicken to coat the pieces with the seasoning mix.
  • Marinate the chicken for 20 to 30 minutes in the fajita seasoning.
  • Heat 1 to 2 tablespoon of olive oil in a cast iron skillet over medium heat.
  • Sear all sides of the chicken over medium high heat for about 5 minutes.
  • Push the chicken pieces to the side and add the sliced onion and bell peppers to the skillet.
  • Toss to combine and continue cooking for another 3 to 5 minutes or until the chicken pieces are cooked through the center.
  • Turn off the heat. Sprinkle the top with shredded cheddar cheese. Place a lid on the skillet and let the cheese melt before serving.
  • Serve the chicken fajitas with flour tortillas and your favorite toppings.
  • Makes about 8 Fajitas

Recipe Expert Tips

  • Marinade the chicken at least 20 minutes before cooking.
  • Use a cast iron skillet to get an authentic smoky flavor.
  • bell peppers: I like to buy a bag of mixed green, red and yellow or orange sweet bell pepper and slice them up. I use what I need for the recipe I am making then I freeze the rest for another use. Check out my How to freeze bell peppers post to see how I stock my freezer with fresh peppers.
