Ingredients  

  • 2 tablespoon butter
  • 1 medium onion (diced)
  • 1 cup sliced carrot
  • ½ cup sliced celery
  • 2 tablespoons minced garlic
  • 2 lbs. boneless skinless chicken (cut into bite size slices)
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 large bay leaf
  • 1 teaspoon parsley
  • 2 cups chicken broth
  • 1 cup frozen peas (thawed)
  • 1 cup heavy cream
  • 3 tablespoons corn starch (mixed into 3 tablespoons of cold water.)

Instructions 

Recipe Prep

  • Dice the onion and carrot. Slice the celery and cut the chicken into bite size pieces. Mince the garlic.

Sauté

  • Press the sauté button and melt the butter.
  • Sauté the onion, carrot, celery and garlic in the butter until the onion is translucent. Turn the sauté setting off.

Pressure Cook

  • Add the chicken to the pot.
  • Add the paprika, Lawry's seasoned salt, ground pepper, parsley and bay leaf.
  • Pour the chicken broth in.
  • Stir the ingredients to mix in the herbs.
  • Twist and lock the lid on.
  • Press the manual button and set the time for 5 minutes to pressure cook.
  • Quick release after 5 minutes.
  • Carefully open the lid away from your face.
  • Add the thawed peas.
  • Add the heavy cream and corn starch slurry to the pot and stir.
  • Press the sauté button. Bring to a simmer to thicken. Simmer until thickened, about 8 minutes.
  • Ladle into a bowl over a biscuit, toasted bread, noodles or rice.
  • Makes about 6 servings.

Recipe Expert Tips

  • Chicken: cut the boneless skinless chicken into bite size pieces.
  • Prep the vegetables ahead of time to save time: Dice the onion, dice the carrots, slice the celery and mince the garlic. This can be done the night before to save time.
  • Mix the cornstarch and water in a small bowl until the corn starch has dissolved.
  • How long to come to pressure: It will only take 15 minutes to come to full pressure and pressure cook for 5 minutes.
  • corn starch thickener: cornstarch is the best thickener for sauces, soups and stews. It will not cause lumps or change the flavor. Stir before adding to the pot.
