Cucumber Dill Dip is an easy dip to make and goes great with vegetables, or chips. Use crisp ripe cucumbers and fresh dill from the garden. Summer dip recipes are easy to make. This dip only takes 10 minutes to make.
In a medium sized bowl mix the softened cream cheese, sour cream, salt and pepper until smooth.
Add the cucumber and dill to the cream cheese mixture. Mix until combined.
Place in a bowl with a tight cover and refrigerate for 2 hours to overnight.
Stir well before serving and adjust salt and pepper if needed.
Serve with pita chips, crackers or fresh vegetables.

Recipe Tips & Substitutions
Fresh cucumber: You can skip deseeding the cucumber if you are using a cucumber with no seeds or very small seeds.
Fresh or dried Dill: Fresh dill is always best for a dill flavored dip recipe but if you don't have any on hand you can use dried dill weed. Taste and adjust the amount when using dried dill. Start with 1 teaspoon and adjust.
Cream cheese: I like the flavor of full fat cream cheese but you can use a low fat cream cheese.
Sour cream: Fresh cucumber will add moisture to the dip so I like to use a thicker sour cream that will help keep this dip very thick.
Sour cream: plain yogurt for the sour cream in the dip recipe instead of sour cream.
Salt and pepper: You can adjust the salt and pepper if needed after the dip has been refrigerated.
