Wash the skin of the papaya under cold running water.
Cut a medium size fresh papaya in half length wise.
Remove the seeds and scrape any strings from the center.
Slice each half of the papaya in slices.
Cut the papaya slices and use a vegetable peeler to remove the skin. Cut the papaya slices into cubes.
Place the cubed fresh papaya on a cookie sheet and place in the freezer until frozen.
Place the frozen cubes of papaya into zip lock bags. Squeeze as much air out and seal. Or use a FoodSaver Vacuum sealer to seal the papaya in perfectly portioned amounts like I did.
