When you make grilled vegetables the sugars in the vegetables caramelize bringing a deep rich flavor out of the vegetables. Grilled pizza needs grilled vegetables in my opinion.

Ingredients  

  • 2 large sliced tomatoes
  • 2 large sliced green pepper
  • 2 large sliced red pepper
  • 2 large sliced onion

Instructions 

  • Thickly slice the tomatoes, onions and peppers.
  • Separate the onion rings.
  • Spread the vegetables out on a cookie sheet.
  • Brush the vegetables with olive oil on both sides.
  • Place the vegetables in a single layer on a smoking hot grill.
  • Tomatoes only need to be turned once. Be careful that you only grill the tomatoes for about 5 minutes on the first side and about 2 minutes on the second side.
  • If the tomatoes are very ripe carefully turn them with a spatula. If the grilled tomatoes are over cooked they will turn mushy and fall apart. Slightly under ripe tomatoes work much better.
