Sautéed Asparagus and Tomatoes with Bacon

Fresh Asparagus and tomatoes are sautéed with bacon for this easy summer side dish recipe. A delicious way to prepare fresh asparagus when the garden or farmers market is bursting with this favorite summer vegetable. Ready to serve in 15 minutes.

Ingredients  

  • 1 bunch fresh asparagus ((rinsed and tough bottom removed))
  • 1 cup grape or cherry tomatoes
  • 4 slices bacon
  • ¼ cup finely diced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon extra virgin Olive Oil
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • ¼ cup grated fresh Parmesan cheese

Instructions 

  • Dice the bacon and fry in a skillet until crispy.
  • Add the diced onion and tomatoes to the pan, Sauté until the onion is translucent.
  • Add the olive oil, the trimmed asparagus, minced garlic, salt and black pepper to the skillet and toss.
  • Cover the pan and sauté the asparagus until tender but still crisp, about 3-4 minutes. Thick asparagus stalks' will need to cook a few minutes longer.
  • Transfer the asparagus to a serving platter along with all the juices from the pan.
  • Grate fresh Parmesan cheese over the top and serve immediately.
  • 2 to 4 servings
