Ingredients  

  • 1 small head cauliflower (leaves and stem removed)
  • 1 envelope envelope Ranch Dressing mix (or 1 tablespoon homemade buttermilk ranch dressing mix)
  • 1 teaspoon freshly cracked pepper
  • ½ cup water
  • 4 oz cream cheese (softened)
  • ½ cup shredded white sharp cheddar cheese
  • cup buttermilk

Instructions 

  • Place the first 4 ingredients into a crock pot slow cooker, cover and cook on high 4 hours or low 6-8 hours depending how large a head of cauliflower you are using. Cauliflower should be very fork tender.
  • When the cauliflower is done add the cream cheese, sharp white cheddar cheese and butter milk to the crock pot. Using a large spoon mix the ingredients together. The cauliflower should fall apart as you mix.
  • Recover and heat for 10 minutes on low until the cheeses have melted.
  • Using a hand mixer beat until creamy.
  • Salt and pepper to taste.
