Make this easy Rustic Peach Pie this summer with fresh peaches. A simple flat pie like this is also called a Galette. You can make this summer dessert in about 40 minutes when you start with a premade pie crust.

– Prepare the Funfetti Cake & Cupcake mix as directed on the package adding the ½ teaspoon to the bowl with the rest of the ingredients.
– Fill cupcake papers ¾ full.

Unroll the store-bought pie crust on parchment paper. Flatten gently with hands, pinching any tears. Transfer to a fresh parchment-lined baking sheet and set aside while you prepare the peach filling.
Peel, pit, and slice peaches into a bowl with lemon juice or Fruit Fresh to prevent browning. Mix flour and sugar, then gently fold into the peaches until evenly combined.
Spoon the peach mixture into the center of the crust. Fold crust edges over the filling, pinching cracks closed. Dot the peaches with butter and sprinkle sugar around the crust edge.
Bake at 375°F for 30–35 minutes, until the crust is golden brown. Remove from oven and let cool completely on the pan before serving for best texture and flavor.
