Only 20 minutes to make these fluffy and creamy Instant Pot Salt Potatoes. Salt Potatoes are also known as Syracuse salt potatoes and are a delicious way to enjoy young baby potatoes.
Rinse and scrub the new young potatoes thoroughly to remove any dirt. Pour warm water into the Instant Pot, then add one cup of coarse sea salt. Stir well until the salt begins dissolving.
Add the cleaned potatoes to the salted water in the Instant Pot. Stir gently to coat them evenly in the brine. Secure the lid, ensuring it is properly locked, and set the valve to sealing.
Press the manual (pressure cook) button and set the timer for 2 minutes. Once cooking is complete and the pot beeps, allow the pressure to naturally release for 15 minutes before carefully venting any remaining steam.
After all steam has released, carefully open the lid. Use a slotted spoon to transfer the salted potatoes to a colander to drain. Serve warm with plenty of butter for a simple, flavorful side dish.
