Homemade White Chocolate Pumpkin Fudge is a perfect fall candy recipe to make. Pumpkin spice fudge is the best fall dessert recipe you can make and share. Perfect on your Thanksgiving dessert table.
Line an 8×8-inch pan with parchment paper, leaving overhang on all sides. In a saucepan over medium heat, melt the butter, then stir in sugar, evaporated milk, corn syrup, pumpkin purée, and pumpkin pie spice until well combined.
Cook over medium-high heat, stirring constantly until the mixture reaches the soft-ball stage (234°F). Use a candy or instant thermometer to check the temperature frequently so the mixture doesn’t overcook.
Remove from heat and quickly stir in white chocolate chips, marshmallow fluff, and vanilla extract. Mix until smooth and fully melted, working fast before the fudge thickens and becomes hard to spread.
Spread fudge evenly into the prepared pan and smooth the top. Cool for at least 4 hours or overnight, then lift out using the parchment and cut into 1-inch squares. Store in an airtight container or gift wrap for sharing.
