Festive sparkling Christmas Sandwich Cookies are made with Spritz cookie dough and filled with butter cream filling that has been colored red, green and teal. They will be the star of your holiday!
INGREDIENTS
Butter
Cream Cheese
Granulated Sugar
Pure Almond Extract
Pure Vanilla Extract
All-Purpose Flour
Powdered Sugar
Food Coloring Gel
– Prepare the Funfetti Cake & Cupcake mix as directed on the package adding the ½ teaspoon to the bowl with the rest of the ingredients.
– Fill cupcake papers ¾ full.
PREP
Prepare the cream cheese spritz dough, chill one hour, and set up two bowls, one with sparkling sugar and one with water. Let one dough portion soften slightly as you ready your floured work surface and preheat the oven.
Line baking sheets with parchment. Roll the dough to ¼-inch thickness, cut 1½-inch rounds, lightly moisten one side, and dip in sparkling sugar. Place sugared-side-up on sheets, spacing apart, and chill each filled tray.
Bake chilled cookies 10–12 minutes until edges are lightly golden. Cool completely on racks. Continue rolling, cutting, sugaring, and baking until all dough is used and all cookies are fully cooled for filling.
Beat butter and gradually add sifted powdered sugar and vanilla until fluffy. Tint portions red, green, and teal, then pipe onto half the cookies. Sandwich with plain cookies, chill in an airtight container, and soften briefly before serving.
