Slowly melt the chocolate in a microwave safe bowl in short increments. Start with 20 second increments and work your way down until there are only small bits of chocolate chips left in the bowl. Stir each time the microwave stops.
Fold the peanut butter into the melted chocolate until the peanut butter is mixed in completely. Once the chocolate and peanut butter are combined add half the Chow Mein noodles and fold until coated.
Add the remaining noodles to the bowl and fold them in. Using a cookie dough scoop drop mounds of the chocolate, peanut butter and Chow Mein noodles onto the lined baking sheet. Add chocolate sprinkles if desired.
Place the trays with the cookies in a safe place on a table or counter top to harden. This can take a few hours depending on the temperature of your home. These cookies are perfect for the holidays or anytime.
