Kielbasa Breakfast Casserole

INGREDIENTS

Thaw the hash brown potatoes. Place the sausage medallions in a large skillet with ¼ cup of water. Simmer until brown, continually flipping. Transfer the pieces to a paper towel lined plate. Dice the onion and bell pepper.

Spread the hash brown potatoes over the bottom of a baking dish. Add the sausage, onions, red bell peppers, and shredded cheese. In a medium bowl combine the cream of celery soup, milk, half and half, and spices. Whisk until combined.

Pour over the ingredients in the casserole dish. Toss with a wooden spoon until evenly combined. Bake in the preheated oven for 45 to 60 minutes or until the casserole is bubbling hot.

Remove from the oven and sprinkle the remaining shredded cheese over the top  and bake for 15 more minutes or until the cheese is melted. Remove from the oven and serve immediately.
