Crock Pot Cheeseburger Soup

INGREDIENTS

Bacon Ground Beef Onion Garlic Cloves Rotel Tomatoes Cheddar Cheese Beef Broth Milk  Salt and Pepper Corn Starch

– Prepare  the Funfetti Cake & Cupcake mix as directed on the package adding  the ½ teaspoon to the bowl with the rest of the ingredients. – Fill cupcake papers ¾ full.

FRY

Fry the bacon. Drain on a paper towel and chop. Set aside. Cook  the ground beef until it is browned, adding the minced garlic to the pan in the last few minutes of browning.

Drain the ground meat and put it into the crock pot with the onion and garlic. Add the diced tomatoes, cheese, milk, beef broth, salt, and black pepper. Mix to combine.

ADD

Cover the slow cooker and turn it on low. Let it cook for 2 to 3 hours. Once the soup is hot and the cheese has melted, add the cornstarch slurry and stir. Recover and heat about half an hour or until thickened.

COOK

Sprinkle the remaining cheddar cheese and chopped bacon on top. Recover so the cheese melts. Once melted, the soup is ready to serve. Serve with biscuits or crusty bread.
