Prepare your canning station by washing jars and lids, setting up equipment, filling the canner with hot water, and heating it so everything is ready when the jars are filled.

DIRECTIONS

Scrub the pineapple thoroughly, remove the peel, eyes, and tough core, then cut the fruit into bite-sized chunks or tidbits suitable for packing into canning jars.

Tightly pack pineapple into pint jars, leaving ½-inch headspace. Boil homemade pineapple juice, pour it over the fruit, remove air bubbles, and secure the lids.

Process jars in a boiling water bath for 15 minutes, cool undisturbed for 12–24 hours, then wash, label, and store sealed jars in a cool, dark place.
